Ingredients:
Topping:
- 1/3 Cup brown sugar
- 1 tsp ground cinnamon
Bread:
- 1/2 Cup softened butter
- 2/3 Cup granulated sugar
- 2 Farm Fresh Rhode Island Red Eggs
- 2 tsp Maple Syrup (or Vanilla extract)
- 1 1/2 Cups all purpose flour
- 2 tsp baking powder
- 1/2 Cup milk
Apple Filling:
- 2 Cups Crispin apples peeled, cored, and chopped
- 1 tsp baking powder
- 1/2 Cup milk
Glaze:
- 1/2 Cup powdered sugar
- 1 Tbsp milk
Directions:
1. Preheat oven to 350F. Prep an 8.5 x 4.5 x 2.5 inch loaf pan by greasing the pan with butter or non stick cooking spray.
2. In a small mixing bowl, combine the brown sugar and 1 tsp of cinnamon together and set aside.
3. In a large mixing bowl cream butter and granulated sugar with an electric mixer until it is light and fluffy. Beat in the 2 eggs and the maple syrup (or vanila) until just combined.
4. In a small mixing bowl whisk together the glour and baking powder. Add the flour mixture to the wet mixture of butter, sugar, and eggs. Stir until well combined. Next add the milk and mix until smooth.
5. Pour half of the batter in the prepared baking pan and spread out evenly.
6. In a small mixing bowl combine the chopped apples with the filling ingredients of 1 tsp cinnamon and tablespoon of granulated sugar. Put half the apples over the batter in the pan. Then pour the balance of batter over top and finish with the remaining apples. Press the top layer of apples into the batter slightly.
7. Sprinkle the brown sugar and cinnamon mixture over the top of the bread.
8. Insert loaf in the oven and bake for up to 1 hour, checking after 45minutes with a toothpick or knife until it comes out clean.
9. When done remove and allow to cool for 30 minutes and then turn out loaf onto a serving plate.
10. In a small bowl combine the glaze ingredients and stir until glaze is smooth. Drizzle over the cooled loaf and serve.
